Water is the most abundant substance on Earth. It is also a key element in gastronomy; it prevents the food from burning, moisturizes and makes them cook evenly. Often food releases those juices and mineral salts to be cooked, and water allows concentrating those juices in broth used to rehydrate other foods such as rice from paella. Thus, when making soup or a particularly juicy dish, or drink the broth what we do is collect minerals, proteins and other organic compounds dissolved in water.
