Preparation

Cut the mushrooms in slices on a cutting board with the help of a knife.

Cut the onion in julienne.

In a medium cauldron, heat the oil and the butter until melted.

Add the onion until caramelized.

Pour the mushrooms and stir fry for a minute.

Add the white wine and a teaspoon of salt.

Add a tablespoon of wheat flour to the sauté and blend with a wooden spoon until a paste is made..

Pour the broth, the cream and stir until making a soup and continue mixing for 10 minutes.
