Guacamole is a sauce made from avocado. The avocado had an erotic meaning for the Aztecs, so much that women couldnt perform the collection of the fruit, for they simbolized the testicles. According to the pre-hispanic mythology, Quetzalcoatl, the Toltec god, offered the guacamole recipe to his people, who extended it throughout the Mesoamerican territory.
It was originally made with avocado and water, but later other ingredients were incorporated.
Guacamole is highly beneficial for the heart’s health, since it helps lower the cholesterol and triglyceride levels, and increases the “good cholesterol” levels. This healthy effect is produced by the avocado, being a fruit of high energetic value, rich in monounsaturated fat. It also has antioxidants, as well as vitamin E.

3 ripe Avocados | |
½ Green Bell Pepper | |
1 handful of Cilantro | |
1 large Onion | |
Juice of 1 Lemon | |
1 Jalapeño Pepper | |
1 Tomato | |
1 Garlic clove | |
3 drops of Tabasco (optional) |

Preparation

Cut the onion, garlic, jalapeno, tomato and green pepper brunoise.

Cut the cilantro into thin strips.

Remove the shell and the seed of the avocado and cut the flesh into cubes to incorporate the remaining ingredients.

Add drops of Tabasco (optional).

With the help of a mortar or grind whisk all ingredients into a chunky or heterogeneous paste.

Serve as an accompaniment.
